Classic Guacamole

Make guacamole just before serving. For total authenticity, serve with freshly fried corn tortillas.

Ingredients

  • 2 large or 3 medium ripe avocados
  • 1/2 tsp  (2 mL)  salt
  • Half small ripe tomato, finely chopped
  • 3 tbsp  (45 mL)  finely chopped onion
  • 2 tbsp  (30 mL)  chopped fresh coriander
  • 1 tbsp  (15 mL)  minced serrano pepper
  • 1 tbsp  (15 mL)  lime juice (optional)

Preparation

Mash avocados and salt with fork (the mixture should be chunky). Mix in tomato, onion, coriander, pepper and lime juice (if using); let stand for 5 to 10 minutes.

Makes about 2 cups/500 mL.
