Celery Root Purée

Celery root, also known as celeriac, has a distinct celery flavour and a creamy texture when puréed.
Ingredients
- 2 celery roots (2-1/2 lb/1.25 kg)
- 10 cloves garlic
- 1/4 cup (60 mL) whipping cream
- 1 tbsp (15 mL) minced fresh chives
- Salt, white pepper and butter
Preparation
Peel celery roots; cut into cubes. In saucepan of boiling salted water, cook celery root and garlic cloves until tender, about 15 minutes; drain well.
Transfer to food processor; add cream, 1/2 tsp (2 mL) salt, 1/2 tsp (1 mL) pepper and 1 tbsp (15 mL) butter. Purée until smooth; scrape into serving bowl. Sprinkle with chives.
