Blueberry Lemon Ice

Ingredients

  • 2 cups  (500 mL)  water
  • 3/4 cups  (175 mL)  granulated sugar
  • 3 cups  (750 mL)  blueberries
  • 2 tsp  (10 mL)  finely grated lemon rind
  • 1 cup  (250 mL)  lemon juice (about 4 lemons)

Preparation

In saucepan, bring water and sugar to boil, stirring until sugar is completely dissolved.

Add blueberries; reduce heat and simmer until berries fall apart when pressed lightly, 5 to 10 minutes.

Remove from heat; stir in lemon rind and lemon juice. Let cool. Strain through fine sieve, pressing down lightly on solids to extract liquid; discard solids. Freeze.

Makes 6 to 8 servings.
