Bistro-Style Brie and Ham with French Bean Salad

Choose a soft, but not runny, Brie for this simple and – dare we say? – sophisticated grilled Brie and ham sandwich with a side of French Bean Salad. The melted cheese will be very runny.
Ingredients
- Sandwich:
- 4 tsp (20 mL) butter, softened
- 8 slices (2/3 lb/350 g) French country boule or other rustic white bread
- 4 thin slices cooked ham
- 10 oz (300 g) Brie cheese with rind removed, cut in 12 slices
- Pinch black pepper
- Salad:
- 4 tsp (20 mL) tarragon vinegar
- 1 tbsp (15 mL) minced shallots
- 2 tsp (10 mL) Dijon mustard
- Half clove garlic, pressed or minced
- Pinch each granulated sugar, salt and black pepper
- 2 tbsp (30 mL) each extra virgin olive oil and vegetable oil
- 1 lb (500 g) French, green or yellow beans, trimmed, blanched, chilled and drained
Preparation
Bistro-Style Brie and Ham: Spread butter evenly and thinly over 1 side of each slice of bread; lay 4 slices, butter side down, on work surface. Top each with slice of ham; divide cheese slices evenly over ham and sprinkle with pepper. Cover with remaining bread, butter side up.
Grill in skillet over medium heat, pressing down with spatula or weight and flipping once, or in pancake griddle or panini press, until bread is crisp and browned and cheese is melted.
French Bean Salad: In large bowl, whisk together vinegar, shallots, mustard, garlic, sugar, salt and black pepper. Whisk in olive and vegetable oil. Add beans; toss to coat.
Makes 4 sandwiches and salad servings.
