Berbere Spice Mix
Many Ethiopian dishes are seasoned with this distinctive spice mix. Recipes vary, of course, but the main flavours remain the same. This version makes enough to fill a spice jar. Use it as a seasoning for grilled fish, poultry or meat during cooking, or sprinkle on meat or vegetable dishes at the table.
Ingredients
- 8 tsp (40 mL) pure chili powder (ground dried red hot peppers) or 2 tbsp/30 mL cayenne pepper
- 5 tsp (25 mL) sweet paprika
- 1 tbsp (15 mL) salt
- 1 tsp (5 mL) ground coriander
- 1/2 tsp (2 mL) ground ginger
- 3/8 tsp (1.5 mL) ground cardamom
- 3/8 tsp (1.5 mL) ground fenugreek
- 1/4 tsp (1 mL) ground nutmeg
- 1/4 tsp (1 mL) ground allspice
- 1/8 tsp (0.5 mL) ground cloves
Preparation
Whisk all ingredients together; store in airtight jar.
Makes 1/3 cup/75 mL.
