Beans with Miso Dressing

This low-fat, low-calorie bean salad can be served as a side dish with almost any meal. You can also use Italian flat beans, pole beans, Chinese long beans or yellow string beans, if desired.

Ingredients

  • 1 lb  (500 g)  green beans, trimmed
  • 4 cloves garlic, peeled
  • 1 tbsp  (15 mL)  rice vinegar
  • 4 tsp  (20 mL)  light miso
  • 1 tsp  (5 mL)  liquid honey
  • 1 tsp  (5 mL)  toasted sesame seeds

Preparation

Halve beans diagonally. In large pot of boiling salted water, cook whole garlic cloves for 2 minutes. Add beans and cook until tender-crisp, about 4 minutes; drain, reserving 1 tbsp (15 mL) of the cooking liquid. Chill beans and garlic in ice water; drain again. Transfer beans to serving dish. Slice garlic thinly and toss with beans. In small bowl, whisk together reserved cooking liquid, rice vinegar, miso and honey until smooth. Drizzle over beans. Sprinkle with sesame seeds.
