Ingredients
- 3 slices multi-grain or other bread
- 1 tbsp (15 mL) basil pesto
- 3 or 4 leaves arugula or other lettuce
- 3 slices roasted red or yellow pepper
- 1 tsp (5 mL) balsamic vinegar
- 2 slices Muenster cheese
Preparation
Lay bread slices on countertop. Spread pesto evenly over each slice. Top one slice with arugula. Pat peppers dry and stack on top.
Drizzle vinegar over the peppers and top with cheese. Crown, pesto-side-down, with second slice of bread. Slice in half.
Makes 1 serving.
